We have always grown our winter spinach by seeding in the early fall. We have a lot growing now for harvesting at the end of February or beginning of March. This week we will transplant 600 new spinach starts filling in any bare spots. With hardening them off at night in the garage, row cover in the Rolling High Tunnel we hope to have higher yields this year. More on this experiment later!
